Our Little Visitor

We have started a compost next to our back door. Since the beginning of the garden, we have been composting to create our own fertilizer. Another thing to preface this story would be may experience, understanding and appreciation for wild animals. I simply to do not like the things and would rather stay away from them.  Well, it happens sometimes and it happened to me the other day. Our visitor was visiting right around our compost pile. I went to the compost to toss some lime skins and there he was, glaring up at me was a HUGE possum. Well, since I have never seen a possum up close, I thought he was huge.  Will laughed at me when I ran in the house screaming and crying, sad, I know. Now there are a ton of them everywhere. That's the little visitor, here he is.


Can you see them in the bottom left. By the time we got out to take a picture, the second one had already arrived. They are taking over!!

Duke heads to the Final Four

As all of you should know, Will Rockett loves Duke. Not just loves but him and Clark Canterbury could name the players, their statistics, their dogs name and not just the players from this season. It is kinda a cute obsession. Anyways, Duke played West Virgina last Saturday night for a spot in the national championship game on Monday night.  I hope you all know that yes did indeed beat West Virgina.  In fact, they went on to play Butler for the championship. They barely beat Butler, but sorry Butler, almost doesn't count. Duke is the 2010 national championship. Here are a few pictures of the semi-final game against West Virgina. We were all at Aunt Jans watching it together, the night before Easter. Richard insisted on taking his shirt off with Woo Woo (aka Will) and running around the house celebrating a Duke win!




We love Sams

We were at Sams the other day and guess what we found. We found a 3 pack of FiberOne blueberry muffins for $1.91! WHOA! We were freaking out! We put 10 in our basket and then realized that it make 180 muffins. So we did the responsible thing and put 2 back and only walked out with 8 packages, :)


Then I was in Tom Thumb yesterday and I found this FiberOne Muffin mix. I remind you this is only one package that makes only 6 muffins. Can you see the price?


Emma and Rachel come to the Cowtown

Rachel and Emma came to see me! It was such a fun visit. The purpose of coming was to find a bridesmaid dress for to wear in Rachel's wedding coming up on May 23rd. The other purpose was for Emma to look at more wedding dresses for her to try on. Finding a dress for me was quite difficult. It had to be a gray knee length dress. We looked and looked and finally found a dress after 6 hours of looking and trying on that worked at Ann Taylor Loft. YAY! We quickly went to a bridal shop here close to my house and in less than an hour. Emma had pretty much decided on THE DRESS for her wedding. I must be really picky. She looked great in it! By the next morning she had decided that this dress was the one. She actually payed for it in Shreveport this last weekend!! Over all so great to see them for an extended period of time, we all love each other :)


I made an Egg Tree

When we were in Germany I saw everywhere, including my mothers house, Easter Egg Trees. They were so cute. Mom and I found the real hand painted eggs at Aldi. I liked the plainer ones that did not have a lot of color. I bought and brought them back to the states. Will recomended I go outside to the tree in our front yard and pick some sticks to start. And this is how the very German egg tree looked in our house.

I really liked having it. Then again, there wasn't much competition because it was about the only Easter decoration we had  :)

Beginning a Garden

We decided, "Why buy our veggies, lets grow them!!" My mother inspired us when we were in Germany to get out and build out own garden. We set out to Lowes to begin our garden. If you have seen all the Lowes commercials where the people are so great and they help you, well we should have been in one of those commercials. The Lowes guy that we met was great and had a degree in hordiculture. He helped us find the right soil, the right pots and gave us great advice. We began as soon as we got home!

We started this all about two weeks ago and we finally started transplanting from the pots to the ground yesterday. When we saw out first sprouts we started to transplant. Here is some pictures from yesterday.




SO GREAT!! We love doing this stuff together. Will said this morning, "Lets go plant some more stuff!"

Salmon from the Midget Kitchen

The Midget Kitchen presents a very good salmon dish.  I love salmon and so does Will. We buy the simple fillets at Wal-mart (about $1 per fillet) and it is SO simple to make. All you do is add 1/8 a cup of lemon juice, 1/8 a cup of soy sauce, one chopped garlic clove and 2 teaspoons of sugar to a bowl. You mix it all together and place the 2 fillets in a small baking dish. Then pour the sauce on top of the fillets and let it sit for about 2 minutes. Don't let it sit for more than 2 minutes because marinating salmon is not good for the fish itself. Then take a little bit of cilantro (or a lot depending on your taste) and put it on top of the fillets. Put it in the oven at 400 and bake for about 15-20 minutes and WHOA!! It is SO good!

I changed it the meal up because I wanted onions that night. So I replaced the cilantro with sauteed white onions. Really good option too. My mom gave me the decoration on the side. It is a balsamic vinegar gel. It looks great when you use it and also can be a part of the cooking or eating of the meal.
